Bijeli čajevi
Bijeli čaj je jedna od najdelikatnijih sorti čaja jer se minimalno obrađuje. Bijeli čaj se bere prije nego se listovi čajevca potpuno otvore, dok su mladi pupoljci još prekriveni finim bijelim dlačicama, otuda i naziv “bijeli” čaj.
Ovi pupoljci i razvijeni listovi iz najnovijeg rasta na biljci čaja beru se ručno, a zatim se brzo i pažljivo suše, tako da se lišću ne dopušta oksidacija sve dok se lišće bere za proizvodnju zelenog čaja ili crnog čaja. Ova minimalna obrada i niska oksidacija rezultiraju nekim od najdelikatnijih i najsvježijih dostupnih čajeva.
